Recipe: Healthy Hazelnut Cinnamon Cookies

So I’ve been thinking a lot about cookies lately. Why? Because every darn webpage I visit reminds me that it uses cookies to store information about me. I’m still trying to cut my daily intake of sugar, though. So I tried a couple of recipes, failed, improvised… To cut a long story short: I ended up making healthy hazelnut cinnamon cookies!

Here’s what you need for six cookies. (Disclaimer: Normal people would call it six servings, but to me, six cookies really equal one serving.):

  • 40 grams of coconut flour
  • 20 grams of ground hazelnuts
  • 20 grams of Xylitol
  • 1 egg
  • 3-4 Tbsp of coconut milk
  • 1 Tbsp of cinnamon
  • 1 pinch of salt
  • 1/4 pckg of baking soda

Instructions

Preheat the oven (180 degrees Celsius). Take a huge bowl and mix all the ingredients. If the dough appears to be too dry, add some more coconut milk. Now put six scoops on a baking sheet and form them by using a fork. Bake the dough for 15 to 20 minutes. Serve & enjoy!

Pro advice: Before you serve them, sprinkle them with cinnamon or cocoa and add some flowers on the plate to make them look Instagram worthy.

About the cookies

Note that whenever I’m baking, I like to improvise. So if you don’t like cinnamon, for instance, you can also add vanilla extract instead. Sometimes I’d also add cocoa powder or chocolate chips to the dough to make it taste sweeter.

And, if I’m feeling like doing something super crazy, I add grated coconut. If you want to do that, you have to add 1-2 Tbsp of coconut milk per 20 grams of grated coconut. Otherwise the dough will turn out too dry.
